Healthy Stuffed Rainbow Peppers

I last visited Oregon in summer 2009. I can pinpoint it quite exactly because we were there when the world learned that the King of Pop had died at the age of 50. I've been to Portland, a nice city with good vegan food and bookstores, and stayed at a beachfront hotel in Seaside before driving up the coast to Washington. Oregon is lovely. Forgive this stub. I am majorly running out of time.
Stuffed Peppers
- 1/4 cube No-chicken bouillon
- 1 red Bell pepper*, cut in half and seeds removed
- 1 large clove Garlic, minced
Israeli Couscous
- 1/8 cube Vegetable bouillon
- 2 Cherry tomatoes, quartered
- 1/3 cu. Baby spinach, chopped
- 1/2 tsp. Nutritional yeast
