Healthy Stuffed Rainbow Peppers

I last visited Oregon in summer 2009. I can pinpoint it quite exactly because we were there when the world learned that the King of Pop had died at the age of 50. I've been to Portland, a nice city with good vegan food and bookstores, and stayed at a beachfront hotel in Seaside before driving up the coast to Washington. Oregon is lovely. Forgive this stub. I am majorly running out of time.

Stuffed Peppers

  • 1/3 cu. boiling Water
  • 1/4 cube No-chicken bouillon
  • 1/3 cu. TVP
  • Coconut oil
  • 1 red Bell pepper*, cut in half and seeds removed
  • 1 sm. Shallot, chopped
  • 1 large clove Garlic, minced
  • Fresh Basil, chopped
  • Nutritional yeast
  • Salt and Pepper

Israeli Couscous

  • 1/3 cu. Israeli couscous
  • 1/4 cu. + 1 tbs. Water
  • 1/8 cube Vegetable bouillon
  • 1/4 cu. Cannellini beans
  • 2 Cherry tomatoes, quartered
  • 1/3 cu. Baby spinach, chopped
  • 2 tsp. Almonds, ground
  • 1 tsp. Pinenuts, ground
  • 1/2 tsp. Nutritional yeast
