Sweet-Potato-Crusted Pizza

I've had a bad experience at Newark Airport which I understand is pretty common. It's interesting that your state elects a vegan senator! I don't know Senator Booker's stance on important issues but he comes across as a good guy, which is pretty unusual for a U.S. senator.

Maybe I was hoping the war in Gaza would be over by the time I posted this. I'm running out of time with Election Day looming, so I'll just refer you to Greta Thunberg's social media. I'm American so I'd choose my words more carefully, but her heart is squarely in the right place. It's insane and I've shed tears, lots. The terrorist attack was horrible so luckily two wrongs (a 20-fold retaliatory collective reprisal) makes a right... wait... that's not right... ask any child!

I'm not going to go into the weeds on this, I could, but I'm only going to say two things, ONE, I'm pretty uncomfortable with assassination as a tool of foreign policy, WOW, that is pretty small, way to sink to Hamas's level. And TWO, some of you think killing civilians is OK because Hamas uses human shields, and I won't defend Hamas or their tactics, only to say, I understand them; they are completely outgunned, Israel has the Iron Dome, America whisks away its leadership to "undisclosed locations," if Hamas could defend their leadership with technology I bet they would but they have limited means and if human shields (like American guerrilla warfare during the American revolution) is one of few approaches at their disposal, than why the f***ing hell wouldn't they employ such tactics? Israel has the option, to kill 10s of 1000s of innocent Palestinians and sink to Hamas's level, or they could say, good move Hamas leadership, you have miles of tunnels under Gaza, we have the Iron Dome, neither of us wants our people/leaders to get hurt but in reality the difference is Palestinians are being slaughtered while Israeli life goes on mostly the same, and Hamas says, Israel, this is your choice, and Israel has chosen to kill their Islamic brothers and sisters for cynical political reasons and if anything you make the release of hostages less likely. I am American so I will say again. The terrorist attack was the beginning of my world falling apart, recent addition. I have great respect for Israel, while at the same time I have my criticisms, and there is no way to grow up in Ithaca, NY and not be friends with Jews and want you to have safe happy lives. Anyone who hates on Jews ain't no friend of mine, and I think terrorism is an outdated mode of raising awareness, but ask Tamahasi Coates or whatever his name is, or ask me at a later time, and we'll tell you, it sucks when the world ignores your suffering and this is not a problem bombs can solve.

This pizza is supposed to have bunny mince meat AGAIN so go for it if you want but I thought I'd use almond slivers instead. In the spring, my favorite pizza topping is fiddleheads with almonds. Here I am suggesting the rare inclusion of vegan cheese. In my experience it works well for pizzas. You could make your own (find a recipe online) but, at least in my town, there is an increasing variety of vegan cheeses commercially available, including some that are pretty similar to what you'd make at home. Or go with a long-standing, slightly synthetic-seeming brand. As I observed a long time ago, there is no way around experimenting with different vegan products if you want to find something to your liking. Pizza is a great way to do this because it is so forgiving.

Crust

  • 1 cu. Sweet potato, cooked
  • 1 cu. Flour
  • 1/2 cu. Just egg
  • 1/2 tsp. Baking powder
  • 1 + 1/2 tsp. Garlic powder
  • 3/4 tsp. Oregano
  • 1/8 tsp. + pinch Chipotle chili powder
  • 1/4 tsp. Sweet paprika
  • 1/8 tsp. Cinnamon

Toppings

  • Drizzle Canola oil
  • 1/3 sm. Eggplant, chopped
  • 1/3 sm. Zucchini, chopped
  • 3 Shiitake mushrooms, sliced
  • 1 red Bell pepper, chopped
  • 1/2 cu. Tomato sauce
  • 1/3 cu. vegan Cheese
  • Almond slivers
