Sea Tacos with Lime Coleslaw and Peachy Salsa

I thought I would try something a little different. I live right next door to Pennsylvania in New York, not so far from the border, so why not take a 2-hour ride to see some natural scenery in our neighboring state and enjoy a picnic lunch there? It's kind of a waste of time since my area of New York is probably just as scenic, and I have about a week to finish the Challenge which is already very challenging without throwing away half a day to road trip into PA. However, Pennsylvania is a big deal, everyone is saying it, so I figure it would be a kind gesture, to see you in person. Not surprisingly, I will eschew the populated areas (where the votes are) in favor of courting the wilderness constituency. It's a losing strategy but it feels right.
Well, this was a nice idea, but I don't have a car until after Election Day. I thought I could borrow one from someone, but that was not in the stars, and renting a car these days costs an arm and a leg. So, I will plan the trip and take it in mid-November (therefore missing the fall colors). It's not ideal but my life right now is far from ideal. I try my best.
The place I wanted to visit is called Worlds End State Park in Sullivan County. It seems nice, isn't too far away, and has a great name (although strangely "Worlds" is plural rather than possessive). I'll update this post with photos after I go.
Honestly, my strongest impression of Pennsylvania is how big it is and how long it takes to drive through it when you are eager to get home after a long road trip somewhere, basically anywhere, other than New England or Canada. Otherwise, northern PA is almost indistinguishable from southern tier NY. I say almost, because driving south into PA, you will start to notice the climate shift. It would be an exaggeration to call it tropical, but I feel like you could stumble onto groves of peaches and pecans.
Look, your governor is on the T.V.! He swears a lot, but maybe he knows his audience. He's kind of centrist so I'm not in love with him, but I see why you folks voted for him. He's likable and sharp and advocates compassion. My one quibble is that he took pains to say Netanyahu is not a terrorist. This may be semantics but nearly 44,000 dead, the exploding pagers attack, 60% of residences and 80% of commercial buildings damaged or destroyed... See my comments on Dick Cheney.
As for the recipe, I looked up vegan seafood substitutes and ruled out bland options like tofu and jackfruit. Instead I settled on chickpeas for the tilapia and oyster mushrooms for the shrimp. I think the recipe will travel well and I am excited to try it someday when I have reliable transportation again.
Sea Filling
- 1 package Oyster mushroom, shredded
- 7.5-oz. can Chickpeas, drained
- 1.5" square Kombucha, ground in a spice grinder
Coleslaw
- 1/4 cu. Cabbage, shredded
Peachy Salsa
- 1 mini red Sweet pepper, diced
To Serve
Preparation
In a bowl, mix all sea filling ingredients until olive oil. Then heat oil in a large pan.
Over medium heat, cook the sea filling for about 10 minutes, stirring every 2 minutes, until
mushrooms are browned and shriveled.
For the coleslaw, simply combine all ingredients. Do the same for the peachy salsa.
If eating at home, warm the tortillas. Then fill each tortilla with sea filling, coleslaw,
and salsa. Enjoy!
