I've been south of Kansas and I've been north of Kansas but I've never been through Kansas. I'm sure you're nothing like Nebraska. I did some research and, while the landscape may be superficially similar, Nebraska is the Midwest while Kansas is the South. Apparently Nebraska grows corn while Kansas grows wheat. And they have completely different license plates. So for being neighbors, Kansas is quite distinct and deserves individual recognition rather than be lumped together with another Great Plains state simply because I've driven through that state several times and it's right nearby.

The early days of the Internet were confusing and I may have accidentally ghosted a Kansas girl, not in an egregious way, back then no one followed up, if you failed to reply that was the end, so not replying was a big deal and mistakes were made. I've made mistakes and I thought the best way to atone would be to acknowledge this one.

So I wasn't going to mention this until I remembered Dark Side of Moon + The Wizard of Oz (start the CD on the second lion's roar, don't forget to put it on repeat!!!) which really works and you will love it. It's like the greatest music video ever, way better than The Wall. And from there it doesn't have a ton to do with your state, way more with mine actually, but it's actually a pretty profound tale and you are woven into it, I guess L. Frank thought you were a pretty stellar "Everystate," prone to tornadoes, which he leans into heavily as a plot device, I mean, British people resort to wardrobes which, no shade on The Lion The Witch etc., is kind of lame by comparison, and you may think she left Kansas, you may even quote a famous line about it, but the whole stupid point (of the movie) is that everyone from her life in Kansas appears in Wonderland, er, Oz, so it may be Oz, yes, but it's also Kansas. I am realizing England, a stupid little island that no longer has a say in our political decisions except as witnesses that are welcome to share opinions, has a lot of Magical Otherworld stories, including A Wind in the Willows (not really), and Neil Gaiman (or do we have him now? eh? Amanda Palmer!) (you're going to lose me votes but I value parasitic friendships) and we here basically have The Wizard of Oz so maybe Kansas, you are the star of this show, you are the fancy mansion in the English countryside during the War, or the fancy mansion in the English countryside during whenever Alice lived (mid 1800s?), you are our fancy mansion in the English countryside, and if you are like a wheatier, more Southern Nebraska, that works for me with what I know, you can be the American ambassador to the Otherworld.

This is yet another shrimp recipe so instead of leaning on prepared un-shrimp, I thought I'd saute some lion's mane mushrooms. It's slightly less exciting but un-shrimp are not really designed to go with real pasta. Lion's mane mushrooms are pretty weird so that makes up for it.

Sauce

  • 1/4 cu. Cashews, soaked
  • Juice of 1 Lemon
  • 2 Tbs. Almond milk
  • 1 Tbs. Nutritional yeast
  • 1 clove Garlic
  • Pinch of Salt

Pasta

  • Vegan Butter
  • 1 package (1-2 cu.) Lion's mane mushrooms, chopped
  • Sprinkle of salt
  • 3-4 servings Whole wheat spaghetti
  • Broccoli crown, chopped
  • 1/3 cu. frozen Green peas
  • 1 7.5-oz can Chickpeas
  • Pepper

Preparation

Combine all sauce ingredients in a blender.

Saute mushrooms in butter and a sprinkle of salt for approximately 7 minutes, until browned. Cook the spaghetti according to directions on the package. With 3 minutes remaining, add the broccoli and peas. Top the drained pasta and veggies with chickpeas, mushrooms, and sauce.

Discussion

I didn't follow the recipe too closely but I tried to stay true to the spirit of it. It was ridiculously easy and quite fun and tasty.

I used to have a dog who looked just like Toto. I'm tempted to write a tribute but I will resist.
